BLITZKUCHEN

(German Quick Coffee Cake)

Ingredients:                               

1 cup flour                                                             Topping:

½ cup sugar

1 and ½ t. baking powder                                  1 T. sugar

½ t. salt                                                                1 t. cinnamon

ĵ cup margarine, melted

½ cup milk

1 egg

½ cup fruit or chocolate chips

Procedure:

1.     Measure out and prepare all ingredients.

2.     In a large bowl, combine flour, ½ cup sugar, baking powder and salt.

    Aerate well using a wire whisk.

3.     In a small bowl, beat together the melted margarine, milk and egg.

4.     Make a well ( hole ) in the dry ingredients and pour liquid mixture

into it.  Stir only until dry ingredients are moistened.

5.     Fold in fruit or chocolate chips using a rubber scraper.

6.     Pour batter into a greased cake pan.  Sprinkle topping mixture over the

batter. 

7.     Bake at 350 degrees F. for 20 to 25 minutes or until a tooth pick inserted 

into the center of the coffee cake comes out clean.
